  2. 2 potatoes cut into halves (optional)
  3. 2 cups methi leaves
  4. 2 chopped tomatoes
  5. 2 sliced onions
  6. 3 tbsp ginger-garlic paste
  7. as required few curry leaves
  8. 2-3 slit green chillies
  9. 1/4 tsp hing
  10. 2 tsp coriander powder
  11. 1 tsp cumin powder
  12. as required Red chilli powder
  13. 1/2 tsp garam masala powder
  14. As per needed Turmeric powder
  15. as per your taste Salt
  16. 1 tsp kasuri methi (optional)
  17. as required Some chopped coriander
  18. as required Oil
  19. as per needed Warm water (if required for gravy)
  20. For Khada Masalas
  21. 1 tsp jeera
  22. 2 green cardamom
  23. 1 black cardamom
  24. 2 cinnamon stick
  25. 2-3 cloves
  26. 1 bay leaf
  27. 2 dried red chillies
  28. 1 chakra pool (optional)

Steps to make to make Methi Masala Chicken

  1. Firstly heat a pan, then add some oil & stir-fry the potato pieces. Now remove them from the pan and keep it aside.
  2. Now in the same oil, add all the khada masalas, including hing, jeera, cinnamon, cloves, green cardamom, black cardamom, bay leaf, chakra phool & dried red chillies. Let them splutter a bit then add the chicken pieces in it.
  3. Now add all the wet ingredients like sliced onions, chopped tomatoes, ginger-garlic paste, some slit green chillies including some curry leaves. Now mix everything well.
  4. Then add all the dried masalas like turmeric powder, coriander powder, cumin powder, red chilli powder and some salt. Mix everything well and cover it and cook it on a low flame for about 20 mins. In between add the potato pieces in it.
  5. After 20 mins open the lid and mix everything well again. At this point of time if you need little water, you can add half a cup of warm water. Let it cook for 7 to 8 more mins.
  6. Till the time the chicken is getting cooked, heat another pan. Add a tbsp of butter and a tsp of oil in it. This combination is required because the butter tends to burn very quickly. Now mix it and add the chopped methi leaves. Add a pinch of salt to it. Now cook it on a high flame until the methi water is soaked completely. Once it's done, switch off the flame or else the methi leaves will start changing its colour from green to blackish & we don't need that.
  7. Now once this is done, add this into the chicken; add some chopped coriander at this point of time, this will reduce the bitterness of the fenugreek (methi) to a certain extent. Now give everything a good mix.
  8. Check the salt once again. Then add some kasuri methi, some garam masala powder and mix it. Cook it for 5 more mins. Then serve it hot with rice or roti of your choice.
    Donot overcook it or else the bitterness of methi would start releasing and the colour of the leaves would turn black.
